Blue cornflower (Centaurea cyanus) is an easily grown hardy annual wildflower that is quick to grow and blooms in summer, bearing masses of pretty, ruffled flowers on slender wiry stems. Blue cornflower blooms are edible, too, and the petals make lovely garnishes to salads and other dishes. Blue cornflowers can also be used as a natural food dye. People take Blue cornflower tea for constipation, water retention, and chest congestion. They also take it as a tonic and as remedy for Weak eyes.
